Haystack cookies are wonderful peanut-butter/butterscotch cookies that freeze well, and travel well (for cookie tins, etc.). They are easy and very quick to make!

Instructions

Things You'll Need:

  • 1 cup butterscotch chips
  • 1/2 cup peanut butter, chunky or smooth
  • 1/2 cup of peanuts
  • 2 cups chow mein noodles
  • Microwave
  • Wax paper
  • A Spoon
  1. Step 1
     

    Gather all require ingredients. Measure out 1 cup butterscotch chips, ½ cup of peanut butter, ½ cup of peanuts, and 2 cups of Chow Mein Noodles.

  2. Step 2
     

    Microwave butterscotch chips and peanut butter on 50% power for 3-5 minutes is a microwave safe bowl. We want to melt them into a gooey mess. Once they have melted, removed from microwave.

  3. Step 3
     

    To the mixture hot from the microwave, add peanuts and Chow Mein noodles. Blend well, until all noodles and peanuts are well coated.

  4. Step 4
     

    Drop by the spoonful onto a length of wax paper.

  5. Step 5

    Allow the haystacks to cool. This can be done in the refrigerator or on the counter, if you prefer.

Tips & Warnings
  • This cookie freezes VERY well. You can make these last minute, or a few days before.
  • This is a great cookie tin recipe. They're quick, inexpensive to make, and are rich in flavor.
  • This is also a great KIDS recipe! They'll get messy, but the kids will taste good, at least!
  • Contains Peanuts, which is an allergen. If you are making Cookie tins for others, make sure they are not allergic to peanuts.
