How to Make Taco Soup

Taco soup is a delicious and simple way to make a nutritious and filling meal. Making this favorite Mexican recipe is a snap, just throw the ingredients into a crock pot in the morning and when you get home, a hot, ready-to-eat meal will be waiting.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 lb. of ground beef
  • 1 large onion, chopped
  • 1 (16 oz.) can of diced tomatoes
  • 3 (16 oz.) cans of beans, your choice
  • 1 (16 oz.) can of corn, do not drain
  • 2 (4 1/2 oz.) cans of diced green chiles
  • 1 (4.6 oz.) can of black olives, drained and sliced
  • 1 (15 oz.) can of tomato sauce
  • 1/2 cup of water
  • 1 package of taco seasoning mix
  • 1 package of ranch dressing mix
  • Corn chips, for serving
  • Sour cream, for garnish
  • Grated cheese, for garnish

Step1
Cook the beef and onions together in a medium skillet over medium heat, drain and rinse.
Step2
Place the beef mixture in crock pot. Stir in onions, tomatoes, beans, corn, chiles, olives, tomato sauce, water, taco seasoning and ranch dressing.
Step3
Turn the crock pot on low heat and allow to simmer six to eight hours.
Step4
Sprinkle shredded cheese on top just before serving.
Step5
Serve chips and sour cream separately.

Tips & Warnings

  • For a different flavor, try substituting a bottle of Mexican beer for the water.
  • For a more nutritious recipe, substitute lean ground beef or ground turkey for the beef and use low fat cheese and sour cream.
  • You can also garnish the soup with diced tomatoes, green onions or jalepenos.
  • This recipe will serves four to six.
