Step 1
Trim your brisket of the fat you can easily get to, as marinades and brisket rubs can't be absorbed through the fat.

Place the brisket in a shallow dish and pour your favorite marinade over the brisket. Cover and put in the refrigerator for at least 4 hours, or overnight.

Remove the brisket from the marinade and place it on a large plate. Rub the brisket with a mix of sprices, such as salt, pepper, onion powder and parsley flakes.

Put the brisket on the grill (over very low heat), covered, or in a smoker for 12 to 15 hours. Check the brisket every hour or so to make the heat level is consistent. Or roast the brisket in a preheated 275 degree F. oven for approximately 6 to 8 hours.

Let the cooked brisket stand for 5 to 10 minutes before slicing.
