How to Cook Shrimp Scampi in a Crockpot

A basic shrimp scampi recipe calls for shrimp to be sauteed in olive oil and melted butter along with garlic, wine and seasonings such as parsley, lemon juice, salt and pepper. Shrimp scampi cooks quickly -- the total preparation and cooking time typically takes no more than 20 minutes on the stovetop -- which can make the dish challenging to prepare for dinner guests. Using a slow cooker to prepare shrimp scampi can free up your time just before dinner since the meal is assembled several hours in advance.

Place a mixture of chicken broth, white wine, lemon juice, olive oil, chopped garlic and minced fresh parsley in a slow cooker. Stir thoroughly and add the raw, large shrimp. Plan on 1 pound of shrimp for every 1/4 cup of broth and 1/2 cup of wine.

Put the slow cooker's lid in place. Turn the heat setting to low and cook for about 2 1/2 hours, or set the cooker on high and cook for approximately 1 1/2 hours.

Remove the shrimp and place it in a serving bowl. Pour the remaining contents of the slow cooker over the shrimp, garnish with freshly minced parsley and serve with crusty bread, pasta or rice.
