How to Make Peach Granita

This peach granita is a little different from most granita recipes because it uses a firmer-fleshed fruit. Still, it makes an enticing summer ice, especially if you have very ripe, soft peaches on hand. This recipe makes about 3 c.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/3 c. sugar
  • 1/2 c. water
  • 2 1/2 c. cubed fresh peaches (see Product Tips for directions)
  • juice of 1/2 lemon
  • 1/4 tsp. vanilla extract
  • Groceries

  1. Step 1

    Place the sugar and water in a small saucepan and heat until the sugar has completely dissolved. Let cool slightly.

  2. Step 2

    Place the peach flesh, syrup, lemon juice and vanilla in a blender and puree the mixture finely.

  3. Step 3

    Place the mixture in a shallow container and freeze for 3 to 4 hours. As the mixture freezes, stir it every 20 minutes or so, so it takes on a granular, flaky texture.

  4. Step 4

    Serve the granita while it's still slushy.

Tips & Warnings
  • Because this granita uses a relatively firm fruit with a high fiber content, the texture won't be quite like the granular sno-cone texture of most granitas, which are usually made from clear juice. If not completely frozen, though, this granita will have a softer, smoother feel.

on 7/9/2009 I bet (if you take alcohol) adding a little dash of Archer's Peach snapps to this would really give it a depth of flavour and a little kick!!

on 8/7/2008 this was a hit, it was fairly easy to make but was a little lobor intensive because i had to keep stirring it every 20 minutes, thanks a lot
