Stainless Steel Properties
Since it is a combination of iron and other hearty metals like titanium, nickel and molybdenum, stainless steel is extremely hard, endures the use of metal utensils without scratching and resists corrosion. Unlike pure copper cookware, impurities do not leach from the metal into foods, so it is safe for cooking and baking.
Proper Care and Use
Although stainless steel cookware is considered safe, manufacturers caution against storing highly acidic or very salty foods in it as they may pit the surface and make foods stick. Most brands of stainless steel cookware have aluminum or copper exterior bottoms to enhance heat conduction, which stainless steel does not do evenly.
Despite its beauty and sturdiness, stainless steel cookware has other drawbacks besides uneven conduction. Large amounts of oil or fat are necessary to keep most foods from sticking. Removing stuck or burnt food from the surface is challenging and typically requires soaking and steel-wool cleaning pads.
