Quick & Easy Royal Icing Recipe

Whether you’re icing sugar cookies or cakes, this is one of the simplest recipes you can find.

Royal Icing Recipe

Makes about 2 cupsAs the royal icing sits, it will dry and form a skin on top.  If you’re not using it right away – or if you’ve got some on standby to be used soon – place a piece of plastic wrap directly on the surface of the icing to keep it from drying out on you.

4 1/2 cups powdered sugar
3 egg whites
1 teaspoon vanilla extract
1/2 teaspoon cream of tartar
Pinch of salt
Food coloring of your choice

In the bowl of a stand mixer fitted with a paddle attachment, combine the sugar, egg whites, and vanilla on low speed and mix until incorporated.  Stop the mixer to scrape the sides and bottom of the bowl, then add the cream of tartar and salt and continue mixing until smooth and silky.

Color the royal icing as desired.  Use it right away or cover the icing with a sheet of plastic wrap pressed directly on its surface and use within 2 hours.
