The shelf life of chicken salad varies depending on where and how you store it--as well as what sort of chicken salad you have. The most common type of chicken salad is creamy and often includes mayonnaise and mustard. This salad is popular at picnics but should be stored in a cooler with ice to prevent food-borne illness. With proper refrigeration, the salad can last several days. Many other types of chicken salad contain fresh greens. Traditional mayonnaise-based chicken salad has a shelf life of three to four days if kept refrigerated and tightly sealed. If frozen, a chicken salad can be stored for up to two months in an airtight container. Move it to the refrigerator for 24 hours to thaw it out safely.

Chicken salad should be stored in the refrigerator, in an airtight container or tightly sealed with plastic wrap. For an outside party or picnic, the salad can be packed in ice. Caesar salad or chicken salad with leafy greens can be kept in a big bowl and covered with plastic wrap until ready to eat.
Chicken salad that doesn't contain greens can also be frozen. It should be place in the freezer in an airtight container on the day it was assembled or bought to retain maximum freshness.
Because it contains meat and other ingredients that require refrigeration, chicken salad is especially perishable when left at room temperature. Bacteria multiply more rapidly in a warm environment and can increase quickly when a salad is left out of the refrigerator for too long.
