We are going to be making some prime rib. Now we have our prime rib in the pan. We want to set this onto a cutting board and we are going to let this rest at least for 1/2 hour to let it reabsorb all the juices. If we don't, all the juices will come running out all on the board and we lost all of that moisture and as you see, it's just a beautiful color. Next we are going to create a Au Jus with the juices that have been left behind and we'll show you how to do that. So now we poured a lot of the fat from the juice and we still have our vegetables in the pan. When you hear this sizzling going on, move these around a little bit with the juices. What we want to do is add one cup of red wine so it's on a burner here. Now it's going to reduce down and what we want to do is add one cup of wine. Make it a pretty good wine that you actually would want to drink and pour that in. It will deglaze the pan and get all those bits of the prime rib. Then we want to two cups of beef stock it's going to add the big beefy flavor to this. Just go ahead and measure that out this is really handy but you can make your own; this is a great method to use too. If you just don't have the time to roast down the beef bones and that type of thing, so you have two cups there go ahead and add to the pot. You want to turn this up to high, you want to reduce this to about half of that liquid and this is going to form our Au Jus for our prime rib.
