Hi. I'm Jules Shepard, and I 'm going to show you how to make a healthy apple bread using Greek Yogurt. I like to use probiotic rich Greek Yogurt wherever possible, including in my baking in place of high oils and butter. In this easy apple bread the Greek Yogurt takes the place of all the fats, yielding a moist flavorful bread without all the calories and fat of a typical quick bread. Preheat your oven to 350 degrees. First, combine 8 ounces of Greek Yogurt, or you may use non-dairy sour cream or dairy sour cream. With 1 cup granulated cane or unrefined coconut palm sugar. Add 2 large eggs and 1 tablespoon pure vanilla extract. Next stir in 2 cups all purpose flour. I'm using a special gluten free all purpose flour for my recipe. If you're baking gluten free be sure to select an all purpose flour without a bad tasting bean flour and one that already includes a binder like xanthan gum. Add 2 teaspoons baking powder, 1/2 teaspoon baking soda and a quarter teaspoon salt which you'll mix until blended. Finally add 1 and a half cups finely chopped, peeled firm, tart or semi sweet apples like Gala, Fugi or Granny Smith apples. And you can also add a quarter cup of chopped pecans if you like. You'll spoon the batter into an oiled 9 by 5 inch loaf pan and may sprinkle with another quarter cup of pecans if you're interested in that too. After baking 45 minutes cover the bread with aluminum foil to prevent the pecans from burning if you included them on top. Bake an additional 15 minutes or until a wooden pick inserted into the center comes out clean. The finished product is a quick and easy healthy apple bread.
