Hi, my name is Mina Newman, Executive Chef of Christos Steak House in Astoria, Queens, New York. Today, we're going to be preparing an oven-baked rib eye steak. This rib eye steak is with the bone-in. First, we'll add salt and pepper to both sides. We heat our sautee pan up with about two tablespoons of canola oil until it's smoking hot. Once the oil starts smoking, tilt the sautee pan forward, add your steak, gent, gently laying it in there, back to front; allow it to sear. This is going to take three minutes on each side. First, we'll do the first, the, the one side; we'll turn it over and place it directly in the oven to continue to bake in the oven. Three minutes have passed, we'll turn our steak over, nice sear and at this point, you want to remove some of the oil. Put it back in, add a tablespoon of butter and finish it in the oven. This rib eye has now been in for eight minutes at 450. And there you have, an oven-baked rib eye steak.
