Hi, I'm chef Kathleen Miliotis, the execute pastry chef at Davio's Northern Italian Steakhouse in Atlanta, Georgia. Today, I'm making a caramel icing that will harden. Basically you take your pot to a medium heat. Add one fourth of a cup of light brown sugar, one forth of a cup of heavy cream. You are going to scald your cream, add your light brown sugar. Once the sugar is dissolved you then can take this icing, pour it over your cake and it will harden within a couple of minutes. And that's how you make an icing that hardens.
