Hi, I'm Nancy Olah, and thank you for joining us today at Today, we're going to learn how to make meatless chili. Now if you want to fool the carnivores in your family, you've got to do more than just give them beans and veggies in their chili. I use a meat analog product which is a meat substitute in order to make my chili hearty and meaty. I've been sauteing my onions and my garlic and now I'm going to add about a cup of beautiful red and green peppers. After my peppers are cooked, I'm going to add a frozen meat analog product. Now some are fresh and some are frozen so it kind of depends on what you want to do with the specific product but I'm just going to go ahead and saute it until it has thawed. After about four minutes of cooking, my burger crumbles are ready so they cook much faster than ground meat. I'm going to season it with a little bit of cumin and then I'm going to go over to my slow cooker to add my beans and salsa. Now I'm at my slow cooker. I've got two cans of drained and rinsed black beans. I choose organic, two cups of salsa and this is where the flexibility comes in because you can make this dish mild or spicy depending on your family's taste. Now I'm going to take the crumbles that we've been sauteing and the peppers and onions and get every last bit into the slow cooker. Last but not least I'm going to add about a cup of tomato juice, put the lid on and let this cook for about three to four hours on high or up to eight hours on low. I enjoy coming home from a hard day's work knowing that my dinner is already prepared because I had the foresight to make my meaty vegetarian chili in the slow cooker in the morning.
