Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make cabbage soup. Now, there are cabbage soups from all over the world. Cabbage is an affordable, tasty ingredient. It holds up really well in soup. I'm going to show you how to make and Eastern European cabbage soup, because I think of cabbage soup as a tasty, economical way to get through some long, cold winters. So, I'm starting with a chicken stock. It's tasty chicken stock. And, I'm going to add some chopped potatoes. I've got a red potato, and a white potato. Can really use any kind other than Russets, because they get kind of mealy. Then, I'm going to add some chopped onion, some chopped garlic, some chopped carrot, and some chopped parsnip. Parsnip is a vegetable that looks a lot like a carrot, only it's white. And, it's a great ingredient to use in soups - it makes them kind of sweet, very tasty. And then, I'm going to add some chopped cabbage. I'm going to season this with salt, pepper, some dried dill, and some caraway seeds, which is the seasoning that you usually see on rye bread, which is also used a lot in Eastern European food. So, you let this cook. It's going to be tasty after about 20, 30 minutes. It's going to be even better after two hours. The vegetables really start to break down, make it thick. Okay, it's been about an hour, and this has cooked up nicely. And, here you have cabbage soup.
