How to Make a Pie Crust from Scratch

Pass up the pre-made pie crust because you are three ingredients (and three simple steps) away from prepping your own homemade dough. Called “3-2-1 dough” for obvious reasons, executive pastry chef Heather Bertinetti’s crust manages to be easy without sacrificing any deliciousness.

Hi, I'm Heather Bertinetti for Today, I want to share with you a simple pie dough recipe. A lot of people go to the store and buy premade pie crusts but I want to show you how simple and easy it really is. So this is called a 3-2-1 dough. So we have three pounds of flour, one pound of water and two pounds of butter. So here in my large mixing bowl I'm going to add my flour in first like so. I'm going to give a generous pinch of salt. So all your dries go in first and now I'm going to add in my cubed butter. Make sure your butter is cold when you add it in to the flour, get it all in there. Now this is the messy part, you've got to get in there with your hands guys. It's kind of fun, it's good for kids to do, rub it with your hands between the flour. We're going to make a sort of pebbly like mixture. The larger the chunks of your butter are, the flakier your dough will be so you don't want to overwork it in there too much. You want to leave small little bits and pieces of butter throughout the dough and the flour. So now that we've rubbed the butter into our flour mixture and it looks like this beautiful crumbly mixture, at this point we can add our cold water. So you just dump it all in at once and then start, just kind of moisten it all together first and kind of pat it down as you go and turn. So this is a very soft sticky dough and it's not going to matter because we're going to chill it, preferably overnight but if you need it for the day of, two hours at least. So there's not a real exact time on how long to knead the dough, it's just until it comes together and then you give it a couple turns over. Well, that's it, super simple, just like I said.
