Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a tortilla casserole and a tortilla casserole is like enchiladas except you don't have to individually roll up each tortilla. What I like about this recipe aside from its simplicity is the fact that you can either use homemade ingredients if you have plenty of time to make salsa and cook your own beans or you can just open a can of beans, you can open a jar of salsa and it will take you five minutes to put together your tortilla recipe. So, here's some salsa this is actually a homemade salsa. It's a roasted tomato salsa and I'm going to line the bottom of the pan and you can, I'm making a small pan here, you can make a big pan, you can pile it up as high as you want and then I'm just going to layer a couple of tortillas in the bottom. I'm going to moisten it up with another little bit of salsa and then I'm going to put some beans on it. These are black beans and I've seasoned them with some guayule chilies. It's a slightly hot red chili, very tasty, boiled and drained them, put them in the food processor but you can just buy any kind of you know, can of seasoned beans and use that on here and I'm just going to make this one layer high but again you can make it as high as you want. I'm going to put a little bit more sauce on top of the beans because it will only make it tastier, put a little bit of cheese on here as well. This is grated cheddar cheese. So you want to use cheddar or jack cheese and then just one more layer of tortillas, some more salsa on top and some more cheese on top and everything that goes in here is cooked. So we're going to put it in the oven but all that really needs to happen is for it to be cooked through and for the cheese to melt. So, that's before it goes in the oven. So, ten minutes have passed and the tortilla casserole is ready, the cheese has melted, started to brown a little. And there you have a simple tasty tortilla casserole.
