How to Double Blanch French Fries

French fries are a common side-order with fish, hamburgers and other diner foods. If you are on the quest to cook the perfect French fry, try double blanching. Blanching is the process of putting the fries into hot oil, and then removing them. This process is best done using a deep fryer that allows close control the oil's temperature.

Things You'll Need

  • Potatoes
  • Dish cloth
  • Cooking oil
  • Deep fryer
  • Timer

Step 1

Cut your potatoes into 3/8-inch sticks. Wash them in cold water to remove any starch.

Step 2

Dry your potatoes carefully, and then place them in an oil bath at 325 F. Leave them in the oil for five to six minutes.

Step 3

Remove the potatoes, and increase the temperature of the oil to 400 F.

Step 4

Put the fries back in the oil for a second blanching. Keep them in the oil until their exterior is golden brown.

Step 5

Remove the fries and season.
