Individual English muffin pizzas make a quick lunch or snack, and they’re easy when the kids want to cook. No dough-making is necessary, and each person can personalize his own little pizzas with a choice of toppings. Assemble, bake and enjoy -- that’s all there is to it.

Just about any ingredient tastes good atop an English muffin-style pizza. Choose a sauce, such as traditional marinara, alfredo sauce or pesto, or spread the muffin with ricotta cheese or soft, roasted garlic. Sprinkle fresh or dried herbs over the base layer for extra flavor. Oregano, thyme, rosemary and basil are traditional pizza herbs, but fennel seed, chives, parsley and other savory herbs add other flavors. Set out pepperoni and cooked sausage crumbles, in addition to precooked chicken, ham, hamburger or boiled popcorn shrimp. Experiment with unexpected vegetable toppings, including finely grated carrots, thinly sliced cauliflower, broccoli rabe, spinach, chopped kale, or cooked and drained grated squash. For the topmost layer, Mozzarella cheese is a traditional choice, but cheddar, Romano, goat cheese, feta and other soft cheeses melt quickly on muffin-sized pizzas.
Make and Bake
Preheat the oven to 400 degrees Fahrenheit; a hot oven helps fuse the flavorful toppings and quickly crisps the muffin crust. Open each English muffin and place the halves on a baking sheet with the cut sides facing up. Spread about a tablespoon of sauce on each muffin half, then simply add the toppings you like. Bake the pizzas for five to six minutes on the center oven rack, watching them carefully to make sure they don't burn. Thin muffins or lightly topped pizzas may be ready to eat in three to four minutes.
