  • 12 ounces jarred marinated artichoke hearts, drained

  • 1/4 cup grated parmesan cheese

  • 1/4 cup shelled roasted, unsalted pistachios

  • 1/4 cup parsley leaves

  • 2 garlic cloves, smashed

  • Zest from 1 lemon

  • 1/4 teaspoon kosher salt

  • 1/3 cup of olive oil

Step 1: Make the Pesto

Process the ingredients until they form a paste. While the machine is running, slowly add 1/3 cup of olive oil until the pesto is well combined. Store the pesto, covered, in the refrigerator for up to a week.
