The roti wrap is thought to have been brought to the Caribbean region by East Indian workers around 1840. With its tasty curried fillings, it became a national dish.
The roti dough is made from wheat flour, baking powder, salt and water. Regional variations include adding more butter and oil. After kneading and rising, the dough is cut into portions, rolled out and cooked on a hot griddle or pan. It should be a lighter in consistency than a tortilla.
Chicken pieces are fried up with onions, garlic, curry powder, paprika and seasoning. A cup of water is added and the mixture is brought to the boil and then left to simmer until the chicken is tender. When ready, the filling is served up in warm roti bread.
