Refreshing Watermelon Mint Beer Cooler

Summer is the perfect time to experiment with cocktails. You have a willing and thirsty crowd, primed to try new libations after a hot day of eating grilled meats, and markets full of ripe produce.

It’s also a great time to start experimenting with some new beer as well. I used an IPA for this, an intense beer that often give you higher alcohol levels than most beers. Although I’ll always advocate for you to go into your local bottle shop and ask for an IPA from the local guy, here are some great IPAs that have a wide distribution and are pretty easy to find from San Diego to Boston. Grab one, grab them all, give them a try and then decide if you like IPAs or not, but keep an open mind.

Watermelon Mint Beer Cooler


  • 5 cups chopped watermelon
  • 2 tablespoons lemon juice
  • ½ cup white sugar or agave
  • 4 fresh mint leaves, chopped
  • 4 ounces triple sec
  • 12 ounces IPA beer
  • 3 cup crushed ice


  1. Add all ingredients to a blender, blend until smooth.
  2. Serve immediately.
