Makes about 4 cups
4 cups raw whole nuts, such as almonds
¼ cup orange juice
3 tablespoons sugar, such as date or maple
3 to 4 tablespoons chile powder
1 teaspoon saltPreheat the oven to 350ºF.  Grease a baking sheet with nonstick cooking spray.

In a large bowl, toss the nuts with the orange juice, ,sugar, chile powder, and salt until they are well coated. Transfer them to a baking sheet, making sure to scrape out any leftover spices and juice clinging to the sides of the bowl.

Bake the nuts, tossing occasionally, until aromatic, dry and toasted, 20 to 25 minutes.  Let the nuts cool completely before serving.  The nuts can be stored at room temperature in an airtight container for up to 2 weeks.
