You only make breakfast for people you really like. You can have lunch with an acquaintance, or coffee with someone you just barely tolerate. You can have a beer with someone you downright detest, as long as the beer is good. But breakfast is something you only make for those in the inner circle. Breakfast is for best friends, out-of-town family, love interests. If you’re going out of your way to make a post-dawn meal for one of these special few, it should be great. It should also be easy because chances are, this person who has earned a spot at the elite breakfast table is someone you want to spend time with. You don’t want to be slaving away in the kitchen.
This takes about 10 minutes to throw together the night before and about 10 seconds to pop in the oven the next morning. That doesn’t just give you more time to spend with this special human who sits at your kitchen table; it also gives you a great reason to open a beer before noon.
Beer and Sausage Breakfast Strata
Yield: 4 to 6 servings
- ½ pound (about 8 cups) ciabatta bread, chopped
- 6 ounces breakfast sausage, raw, removed from casings
- 1 cup (3 1/2 ounces) Parmesan cheese, freshly grated
- 1 ¼ cups whole milk
- 12 ounces pumpkin ale (or wheat beer or brown ale)
- 8 large eggs
- 1 teaspoon chopped fresh sage
- 1 teaspoon chopped fresh rosemary
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- Add the bread and sausage to a 5-quart baking dish.
- In a large bowl, stir together the remaining ingredients and pour over the bread crumbs.
- Cover with aluminum foil, refrigerate overnight (about 10 hours).
- Preheat the oven to 350 degrees Fahrenheit.
- Bake covered for 25 minutes. Uncover and bake for 25 minutes or until the bread is golden brown and springs back when touched.
- Allow to sit for 10 minutes before cutting.
