Using a gas-powered grill provides for quick cooking times. When preparing steak on a gas-powered grill, use the highest heat setting. Allow the grill to preheat on the high setting with the lid closed before adding the steak to the grill.

Preparing Steak on a Charcoal Grill

Charcoal grills offer a more time-consuming method for cooking with less control of the temperature. As with the gas grill, charcoal should be very hot, with the briquette turning from black to light gray before you apply steak to the grill. Keep the lid of the grill closed while the briquettes heat to the appropriate temperature.
