You don't have to roast a pig in your backyard to host an authentic luau, but your menu should have a tropical theme. Start the evening with a Polynesian pupu platter with hors d'oeuvres selections such as Hawaiian spare ribs, beef teriyaki, spring rolls and crab rangoon. Offer fruit-garnished cocktails such as mai tais or blue Hawaiians.
For the main course, use an outdoor grill to create kabobs of meat, pineapple, mango and bell pepper. Coconut shrimp and grilled pork are appropriate entree ideas. Don't forget a platter of sliced pineapple--a staple for any traditional luau party.

Encourage guests to wear festive clothing to the luau. Suggest floral shirts for men and colorful flowing skirts for women. If the party will be poolside, let guests know to bring their bathing suits. As the host, greet each guest with a floral lei made of real or silk flowers upon arrival. Handing out grass skirts is optional, but they can be a fun addition for partygoers (particularly if they'll be hula dancing).
