The delicious richness of cream cheese can be applied to many types of desserts. It has long been the main ingredient in cheesecake, but it also has started showing up in brownies, muffins and cupcakes to the delight of dessert lovers everywhere.
Cream Cheese Tarts
Preheat your oven to 350 degrees Fahrenheit. Spray a set of six small tart pans with nonstick spray or use cupcake liners in a muffin pan. Beat two softened 8-ounce packages of cream cheese until fluffy. Add 1 cup of sugar and 1 teaspoon of vanilla to the cream cheese and beat thoroughly. Add two eggs, one at time, mixing one in fully before adding the next. Place a vanilla wafer in the bottom of each cupcake liner, flat side down. Drop a spoonful of the cream cheese mixture onto the cookies. Bake them for 20 minutes. Let them fully cool before topping them with cherry pie filling.
Chocolate Cupcakes with Cream Cheese Filling
Preheat your oven to 350 degrees Fahrenheit. Make your own cake batter from scratch or use a 1-pound box of chocolate cake mix. Put the batter aside. Mix an 8-ounce package of softened cream cheese with 1 egg and 1/3 cup of sugar. Blend these ingredients thoroughly with a hand mixer. Spoon the chocolate cake batter into cupcake cups until each cup is about two-thirds full. Spoon the cream cheese mixture on top of the cake batter and bake for 20 minutes. Cool and serve.
Preheat your oven to 350 degrees Fahrenheit. Prepare a box of brownie mix and pour half of it into a greased square cake pan. Put the remaining batter aside. Put one 8-ounce package of softened cream cheese into a mixing bowl. Blend in 4 tablespoons of soft butter, followed by 1/3 cup of sugar. Add 2 eggs, one at time, blending the first before adding the second. Add 2 tablespoons of flour and 3/4 teaspoon of vanilla flavoring. Mix thoroughly and pour over the brownie batter in the pan. Drop dollops of the remaining brownie mix over the cream cheese mixture. Run a knife around the pan to create a marbled effect. Bake for 20 minutes or until done. Put a toothpick in the brownie mix. If it comes out clean, it's done.
Cream Cheese Filling Variation
Cream cheese filling can include eggs, as in the recipes above. However, eggs are not necessary. Use the following egg-free cream cheese filling if you prefer. Soften one 8-ounce package of cream cheese. Mix it with 1/2 cup of sugar and 1 teaspoon of vanilla extract. Combine the ingredients with a mixer until the mixture is creamy. You can create a quick cheesecake by pouring this mixture into a preformed graham cracker crust. Chill the cheesecake mixture and then top it with cherry or blueberry pie filling.
Carrot Cake Muffins
Prepare a carrot cake recipe from mix or from scratch. Pour the mixture into muffin liners about 3/4 of the way full. Create a cream cheese filling by mixing one 8-ounce package of cream cheese, 1/4 cup of sugar and 1/2 teaspoon of vanilla. Using a hand mixer, blend the ingredients until they're fluffy. Drop a spoonful of the cream cheese mixture on top of the batter in each muffin cup and bake for 20 minutes.
