French fries, battered fish and fritters; these are just a few items that cook quickly in a cool touch deep fryer. Beyond cooking, other advantages of these deep fryers include a lid that covers the frying basket during cooking, and a removable oil reservoir for easier oil storage and clean-up.
Preparing to Fry
Before using the deep fryer for the first time, wash the basket and removable oil reservoir in hot, soapy water and dry completely.
Fill the reservoir with oil between the capacity lines. Do not mix different types of oil or add new oil to used oil.
Lower the basket into the deep fryer, close the lid and turn on the unit. Set the temperature control. Chicken strips cook at 375 degrees, as well as frozen French fries, fritters, onion rings and breaded shrimp. Set it to 360 degrees for bone-in chicken pieces and 340 degrees for battered fish. Allow the oil to preheat before adding food.
Remove ice particles from the food, to prevent burns from oil splattering.
Open the unit slowly to allow the steam to escape and lift the basket from the oil. Fill the basket with enough food so that the oil surrounds the pieces.
Lower the basket into the oil, close the lid and set the timer; this will vary depending upon the food. Shrimp and fritters cook in 2 to 4 minutes, onion rings and French fries in 3 to 5 minutes, chicken strips in 5 to 8 minutes, battered fish in 8 to 10 minutes and bone-in chicken in 15 to 20 minutes. These times are a guide; adjust for different quantities or thickness of food as well as taste.
Lift the basket when the food is finished and allow the oil to drain before transferring the food to a serving plate. Unplug the deep fryer.
Cool the deep fryer completely before cleaning. Pour oil used for French fries through a strainer and store in the refrigerator for future use; this oil can be reused 8 to 10 times. According to Euro-Pro, "oil will be tainted fast when frying food containing a lot of protein, such as poultry, meat and fish." Replace oil that foams when heated, grows darker, has a rancid smell or becomes syrupy."
Wash the basket and oil reservoir in hot, soapy water, rinse and dry completely. Wipe down the exterior of the deep fryer with a damp, soapy cloth. White grease filters-if the unit has them-can be washed in hot, soapy water, rinsed and allowed to air dry. Charcoal filters cannot be washed and should be replaced every three months or after 12 uses.
