Zucchini squash are nutritious summer vegetables that grow easily in most gardens. Harvest these delicious summer squash vegetables fresh from the garden and then use them for baking or cooking a variety of recipes. A gardener will be kept busy every day once zucchini plants begin to produce.

      • Zucchinis reach maturation between 45 and 55 days after sowing. Watch the progress of the zucchini plants. Once the pretty yellow blossoms appear on the zucchini plants, check daily to monitor the progress of the growing zucchini. Look carefully under each zucchini plant leaf to find the zucchini growing underneath. Be aware that as zucchini plants grow large and leafy, it can be challenging to find all of the zucchinis that are hiding under the leaves of the plant. Daily checking will enable you to pick the zucchini before they grow too large.

      • Harvest the zucchini squash when they are 4 to 6 inches long and approximately 1.5 to 2 inches in diameter. Wear gardening gloves when cutting the mature zucchinis from the vines, and use a sharp knife to avoid damaging the fragile vegetables. When the zucchini plants begin to produce abundantly in the middle of the growing season, it will be necessary to pick mature zucchinis every day to prevent them from growing too large.

        Keep zucchini squash cool and dry and they will stay fresh for up to five days after harvesting.

      Large Zucchini

      • Allow a few select zucchinis to grow very large. These zucchini will be suitable for using for baked stuffed-zucchini recipes. Shred any overlooked extra-large zucchinis for zucchini bread or other baked goods.
