Ropa Vieja is a dish that originated in the Canary Islands. These islands, located off the coast of North Africa, were the last place for Spanish ships to stop on their way to the Americas. As migration to the New World became constant, certain aspects of Spanish culture mingled with traditions of the natives. One of these blendings of culture was the cuisine. Though the Spanish version of Ropa Vieja contains garbanzo beans or potatoes, the Cuban dish consists of shredded meat in a tomato sauce.
