Falafel is a staple in the diets of many cultures of the Middle East. Mizrahi Jews have eaten falafel for hundreds of years, and its popularity has spread to Europe and the US, where it is commonly eaten as a sandwich inside pita bread. Falafel is made from fava beans or chickpeas, sometimes both, which is formed into balls with spices and other ingredients, and fried. In Israel falafel is commonly served with fried eggplant.
