Have you ever found yourself with a lot of random ingredients and no idea what you can make? Panzanella is a great dish that can be created through combining almost any leftovers that you might find strewn about in your fridge. Why stop at vinegar when wine would make a good dressing? Why stop at bacon bits when eggs are useful as well?

Panzanella is an Italian dish that originated in Tuscany. It contains many different ingredients and different combinations of those ingredients. This being the case it is also referred to as 'the leftover salad.' This is because almost anything is fair game as an ingredient in it. It is very popular in the summer months and is considered a bread salad. It consists of everything from tomatoes, basil and olive oil to vinegar, wine and eggs. So lets get to it!

Lori Schneider Lori Schneider is a chef and owner of Figs Catering in Austin, Texas. She began her career in restaurants and food while at studying at Texas A&M University. From there she completed a BS in Nutritional Sciences and a BS in Food Science in 1999 and 2000, respectively. She began her career in research and development and culinary training. Thirteen years later, she is still working in food industry. In 2004 she attended and graduated from Le Cordon Bleu's Texas Culinary Academy in Austin, Texas.
