My name is Dwan Kelsey, and I'm a nurse practitioner with Well Life, a diabetes clinic and educational resource center located in Raleigh, North Carolina and we will be discussing diabetic family menus. For a dinner menu, a diabetic family typically can eat just about anything. It's really portion control, how much they're eating, and what they are eating with. So when we talk about a meat, if they would like to eat a meat, or consume meats, we want that meat to be a side dish. That should not be the main entree, that should not be the main you know, event of that meal. So we want it to be we try to teach families, diabetic families to make the meat be a side dish. Just like the vegetables are a side dish. Don't forget about the dark green, leafy vegetables. So the collards and the spinach and the kale and the turnips and Swiss chard, we want to make that actually be the entree. That's the main event of that particular meal. And then the other side item can be things like brown rice, couscous, with just a small pasta, there can be a small amount of pasta. If one would like a salad, candied yams, so it doesn't have to be so much different than a typical meal, they just have to learn how much to eat and what to eat it with.
