Hello, this is Coreen from Shakes Bakes. Right now, we are going to grill an eggplant in the oven. So, here's what we need to make that happen, a trusty eggplant, a sharp knife, an oven and what I did was I laid some foil paper down on the bottom rack of the oven just to make sure that it catches any of the drippings that may come out of the eggplant. So, the first thing we're going to do is we are going to take our knife and we are going to pierce the skin. This is so this wonderful; wonderful eggplant can let out some of those tasty juices that are just a little bit too plentiful. Really simple, we're going to take this, I preset the oven to 450 degrees. I'm putting it on top of the rack right here. I'm going to let it set in there for about an hour, rotating it every 15 minutes, okay, until it looks charred on the outside. So, after about an hour at a temperature of 450 degrees, rotating every 15 minutes, this is what your grilled eggplant should look like. This is in no way a substitute for using a grill outside, where you can load up your wood chips or your coal to infuse more flavor into the eggplant, but this is a great, great, great alternative. So, how do you get the actual eggplant meat out of the skin, is you snip off the top, but I learned a trick. You can wrap this in saran wrap and squeeze out the meat kind of like you would squeeze out toothpaste out of a toothpaste tube. So, let's watch how I do that right now. This is good. So what I'm going to do, take some Cling Wrap. So right now, I'm going to grab a bowl, and you see how I squeeze it from the base just like you would do toothpaste out of a toothpaste jar. Make sure we get all that goodness. This is a fantastic way to start off your eggplant before you incorporate it into a dish.
