Hello, this is Coreen from Shakes Bakes, and right now we're going to be frying eggplant. So, some of the ingredients that we're going to need are, obviously, our trusty eggplant, a knife, an egg, a cup or so, of bread crumbs, we'll see how much the eggplant yields. Three tablespoons of Canola oil in a skillet and this is just a mixing bowl. So, right now, I'm going to peel my eggplant and cut it into strips. So, our eggplant, right now is peeled, I'm going to go ahead and slice them up, the way I like it. Just kind of, similar, I guess, you would say, to French fries. I think, my strips are a little long, I'm going to go ahead and cut them in half. Just make them a little more manageable for me, here we go. Take them and I'm going to put them in my egg. I'm going to take my spoon, make a nice light coating of egg, see that. So, now that the eggplant is nice and coated with egg, I'm going to go ahead and rub this stuff with a cup of the bread crumbs. I'm going to go ahead and add this into a bowl, like so. And I'm just going to dump the contents in here, just to coat it. It looks great already, eh, I can see this thing is ready. I have my oil on high, I'll turn it down to maybe a medium. Look at that, doesn't that sound so nice. You don't want to crowd your pot or your can, rather, you want to get them in there. I guess, you can call them eggplant fries, but they're really just fried eggplant. So, like magic, I guess so, we fried up these eggplant and they're looking pretty good.
