CLANCY ROSE: Next, we're going to talk about your home espresso machine. The machine that you have right here, the portafilter, and the screen in the portafilter. Right here is the steam wand and what you're going to want to do is turn on your espresso machine and wait a little while for all the parts of the espresso machine to warm up to the proper temperature. You can warm up the portafilter a little better by turning on the group head and flush some water through it. You can flush water through the steam wand and make sure that's working properly and heat up the steam wand better. When you do that, you're going to wrap that wet towel around it, so that you don burn your hand on the steam. So, the temperature of the water is one of the other most important things that goes into the espresso preparation process, and so to test the water temperature, I have this thermometer. A good temperature for a good espresso is right at 200 degrees Fahrenheit, and so I need a thermometer that goes up probably above that. This one goes up to 220 degrees. What I'm going to do is turn on the group head, so that water start flushing through the portafilter. Stick the thermometer in there and you got to be careful, so that when the water is coming out, you don't get burned by the hot water, and wherever the thermometer stabilizes at is where your water temperature in the machine is going to be at and you want that about 200 degrees. So the water in this machine right now is right at about 200 degrees and it's staying stable right there. If it's not in your home machine then that's when you'd go to the owner's manual and try and figure out how you set the temperature of the water and try to get it to 200 degrees, and also how you help keep the temperature stable at 200 degrees.
