I'm Ernie Paquette with Zola Restaurant in Nashville, Tennessee. What is a food and beverage manager? Food and beverage manager oversees the operations for the restaurant, works with the kitchen manager or executive chef. Basically oversees inventory, looks at costs. Basically, in fine dining industry, you want to maintain food costs under thirty percent, liquor costs under forty percent. Now that's just here in he state of Tennessee because we have to include state tax within the pricing on a wine list. Food and beverage manager or F & B manager is basically the blood and guts of the front of the house operations. You have to be able to work with your floor managers, with your servers, with the customers. All depends on how expensive an operation you're wanting to starting out with. Basically, you're in a smaller case scenario, like we are here at the restaurant. I'm the GM, the F & B and I'm the host every night. Controlling costs is the most important job of an F & B manager. They're seeing everything from linens to electricity, gas, parking, attendance. You're basically wanting to keep, get people off the clock as quickly as possible, making sure that everyone's being efficient, being productive. We have an old mind, if you've got time to lean, you've got time to clean. So the person that ensures that costs are kept low, productivity and efficiency is kept high, is the job of a food and beverage manager.
