Step 1
Preheat oven to 325 degrees, placing a 12" square of foil paper on rack, lowest rack position. Prepare the cake using 6 eggs,separated. Beat the yolk until very thick and lemon colored about 5 minutes in large mixing bowl. Gradually add in sugar, and mix. Sift the flour in a medium mixing bowl. Add the baking powder and salt to flour mixture. In a measuring cup, blend extracts and water. On low speed, mix alternately the flour mixture and water mixture.In another large mixing bowl, beat the egg whites and cream of tartar until the egg whites are stiff. Cut a 12" piece of parchment paper into a 10" circle that will fit into the bottom of the cake pan. Baste the top of the parchment paper w/margarine, then dust w/flour. Shake pan and remove excess flour Fold the egg yolk mixture into the whites gently, then pour the mixture into the cake pan. Level the cake mixture in the cake pan by gently tamping the pan to remove any air bubbles. Bake the cake for 50-60 minutes, or until toothpick inserted 1" from sides of pan tests done. Remove to a cooling rack and let cool for 20 minutes. Use a knife and cut around the pan side to free the cake. Take the other cooling rack and place on top of the cake, and flip over. Remove the cake pan bottom. You can leave the parchment paper on if you like. Place a cooling rack on top and flip cake over to upright position. Place cake on serving plate. Use toothpicks in 2 even rows to mark 3 layers around the cake. With long serrated cake knife, cut the cake into 3 layers. and set aside.

Prepare the fruits and whipped cream filling: Peel 2-3 fresh ripe bananas. Cut into 1/4" circles and put on a plate. Rinse carefully the strawberries and drain them. Pat them dry w/clean paper towels, setting aside 6 nice looking strawberries for later use. Remove the rest of the strawberries' tops, then cut them into 1/4" circles. Set aside on a plate. In large mixing bowl,whip the cream w/the confectioner's sugar until thick. With a spatula, spread the cream on to the bottom layer. Place the banana slices on top of the cream. Spread cream on top of the bananas, then place second cake layer on top of the bananas. Spread cream on top of the layers, place strawberry circles on top of the cream. Add cream, then place the top cake layer on top of the cream.

Finish the cake using all the cream on all sides and top of the cake evenly. With Decorator Icing that you can make or use, write a greeting on the cake. Place the set aside strawberries on top around the cake with tops placed in the center..Serve and enjoy!
