How to Make Bread Machine Sourdough with a Starter

Summary: I followed the easy instructions to make my own starter but then found that actually using the starter to make fresh, homemade bread by hand was far too time-consuming. Playing around with my ancient bread machine that uses 3 cups of bread flour, I came upon a recipe and a technique that makes beautiful loaves.

Instructions
  1. Step 1

    If you keep your starter in the refrigerator, feed starter 1 cup flour and 1 cup warm water and bring the starter to room temperature overnight on the counter.

  2. Step 2

    Load all the ingredients into your bread maker. For my unit, the yeast must be piled into a corner. Next, add the starter on top, followed by all the other ingredients.

  3. Step 3

    Cook the bread on the white bread setting.

  4. Step 4

    * Once the machine starts, pay attention as the ingredients mix. Starter has a different consistency from batch to batch and the amount of water you must add varies.

  5. Step 5

    * Stay with your machine as the dough mixes to make sure you have the correct amount of water added to the recipe. After that, you are free to go do something else and come back several hours later to a freshly baked loaf of bread

  6. Step 6

    * If the paddle has difficulty spinning, add 1 Tablespoon of water and monitor how things are doing. If the paddle can move freely, you have added enough water. The dough ball should be compact and have stretch marks on the surface. Do not add too much water or your loaf will not rise well.

  7. Step 7

    * Each type of bread machine has a different design. If your dough rises too much, adjust the amount of yeast added to the starter.
