"Hi, I'm Diane Weisman, and on behalf of Expert Village, we are going to show you how to make the ultimate holiday turkey. Now after this mixture has boiled. We're going to strain it, and we move it over here and pour the juice in here and what we need to do is strain all the juice out of the vegetables. So we press down on it and get all that juice out. Cause this juice we're also going to add to the gravy. This is the juice that has been simmering with the onions and the celery. Press that down. Get all that wonderful gravy juice out of there. Now we are going to make the cool down stock, and a half a cup of flour and mix them together to make the turkey gravy. You want to add this flour to a cool mixture, because if you add it to a boiling mixture or a warm mixture it tends to clump. Now we're going to mix the juices from the turkey into the flour and stock. Put it over a mild, moderately high heating, bring it to a boil. It will thicken. And you will have wonderful delicious gravy."
