"You have got a lot more to worry about and a lot more to think about and it is not just about the cooking then. It's all about you know how am I going to pay not just for the food but for the lights, the people out in the front, advertising. If you have got a good idea, if you have got a good concept and you are in the right place, it will probably work but again 50% of the people that think they do are not there even sometimes now six months after. Look at demographics, you know, find and make sure that where you are thinking about putting this restaurant is the right place, making sure that that concept is the right concept. Again you might have what you think is the ideal concept and you go into a place right next door and you have got the same thing. So you have got to mind that, do the work, look at all the backing you can get, the financing then you start worrying about the menu. You have got to find a place. You have got to get the rent right where you need it. Many times you can walk into places that did go out of business and get a heck of a deal on it. You can buy the business and sometimes a name if it didn't get run into the ground before you get to it. In that case then you are going to have to put a new name on the building but those are some of the things that I would look at. Menu your development, that's that concept thing that comes in time once you get the nuts and bolts of setting the business up and making sure that you have got the cash flow to carry it throughout and getting the cash to buy the food and to buy the equipment that you do need to have in there. I think again it is more of a fund raising effort way up front before anything else before you go any further with it."
