"An addictive personality is good because you got to be addicted to what you're doing. You got to be dedicated to what you're doing. Your work becomes your life in our business, unfortunately. Fortunately, I've found education so I do have two days a week off now but it used to be you'd work six and a half days many times or more. So you've got to be dedicated to what you're doing, you've got to love what you're doing to be dedicated. And it's just an all consuming life. I mean your work becomes a lifestyle. It's not that you go in and punch a clock, cook for eight hours and go home. I can remember and I still do on the drive to work I'm thinking about what I'm going to be doing, what's going on, what I can do better for the next time around. Going home same thing, what did I do good, what didn't I do well, what can we do better to make it work better next time around. Saving steps. One thing that I always tell my students is we always say you want to have organization in your life and not just in the kitchen but I find shorter routes to get to and from work because I love it so much. I find shorter routes to go up and down stairs or to get from one side of our campus to the other now because I'm just so used to economizing. And like I said, it's just an addiction that people that stay in it as long as I have have got to be that way or they wouldn't be in it that long. It's just, once you start not liking this business you absolutely hate it and most people just say I'm out."
