"Hi, my name is Charlotte Skiles. I'm a nutrition consultant and clinical herbalist with Eat in Peace Wellness Consulting. And today, I'm going to talk to you about how to do the South Beach Diet. This is a very popular diet, and my first thought to respond to this question is to go read the book. I constantly work with people and they say that they're doing certain diets, and I ask them if they've read the book and they say no, they just follow what a friend's doing or they just read the most relevant chapters on how to do the diet. And the whole book lays out the context and the specific theories behind the diet, so the taste of a South Beach Diet is basically it's one of the many low-carb diets out there. So basically, there's a two-week phase where you're phasing our carbohydrates, and then you continue on to something more sustainable. And a low-carb diet can go a...can go a long way to improving the health of the body because, as a society, we do have way too many carbohydrates in the diet. So in terms of how to specifically do the South Beach Diet, and one of the things that they're going to tell you to do is to avoid grains. So grains would be flour products, bread, potatoes, pasta, even alcohol to some degree, and sugar, high fructose corn syrup. Those are some of the more processed foods that are nutritionally void in our society, and removing those from the diet is largely what the South Beach Diet is going to tell you to do. But yes, I recommend reading the book. Don't take my word for it."
