"Hi, my name is Raphael Perrier. I'm from Kahwa Coffee Roasting and I'm going to be talking to you about how to make an Italian coffee. In Europe, especially in Italy, and Italian coffee, as we call it here, is an espresso. In Italy, we don't serve drip coffee like we do here in the United States. They only drink espresso. From the espresso, you've got the espresso basic, the macchiato, which is an espresso with a touch of foam on it. And then you have a cappuccino and the latte. The cappuccino is the foamy milk with the espresso and the latte is the less foamy milk with the espresso, more like a liquid milk, steamed milk. To make an espresso, you need a very, very fine grind, almost the finest grind. You have Turkish grind, which is the finest one, and then espresso, it's kind of a powder. You need a finer grind because the espresso comes out of a machine that builds a lot of pressure and some machines actually brews your coffee with steam, that's how high the pressure goes. The extraction of the espresso, the Italian coffee, is very, very slow; very compact and very creamy that's where you get that cream on top of the espresso that looks kind of little sugar top.
