"Alright we're going to go ahead and cut our potatoes so that they'll cook a little bit faster. And also it'll be easier to cut them when they're raw than after when we drain them. So we'll go on and dice these and I'm going to cut this potato a little bit smaller than the others because it's the biggest of the three to try and get them to cook in a uniform time. So we'll flip them over to see, check that there are no black spots. And they all appear to be good. So we'll go ahead and dump them into the water and then put the lid back on. So then we're going to start with our blackening spice. We're going to take our thyme. And again we can pull leaves off like this or we can simply rub them. If you have a sharp knife you can just go ahead and dice them into small pieces."
