Hi, I'm Jarret from Stone Soup Farm and this is how to harvest and store carrots. Once you've got your carrots in the ground like this, it's relatively easy to take care of them afterwards. Carrots can't really be pulled out of the ground right away, they have too much roots in there, and if you try to pull them from their leaves, their leaves all just break out and then they become very difficult to get out. What you should do is get a spade fork or a shovel, and you can see where all the carrots are in the ground like that. They're all kind of poking out there. Put the shovel about six inches to a foot away. Dig it in, and you want to go straight down so that you're not damaging the carrots with the shovel, and you loosen the soil around and kind of pull them to the side. Once that's done, the carrots very easily come out and you can break off the tips, break off the leaves and you've got yourself some nice carrots. Carrots will last best in a root cellar. If you don't have a root cellar or any kind of cold storage, then it's probably best to keep them in a plastic bag in your fridge. You can also freeze them or you can can them. But they will store for at least two months without any real processing needs other than keeping them in the fridge or in your basement in a plastic bag or something like that.
