Shrimp is an accessible choice for seafood dishes. As a greasy finger food, it can be breaded and deep fried, but it can also serve as a healthy alternative to red meat when it is peeled and grilled. It can be boiled, used as filler for tortillas and pitas, and it can be cooked, cut and used for skillet recipes. Shrimp can even be stuffed inside a French baguette for a Cajun treat. No matter what it’s used for, shrimp lends its flavor and texture naturally to just about any recipe. In this free video series on seafood recipes, a professional chef demonstrates a spicy tomato shrimp recipe. Gather necessary ingredients, like shrimp tails, rice, asparagus and mushrooms, and find the right utensils for this dish by gathering a sauce pan and two stock pots. Make a roux base for a spicy tomato sauce, and blanche asparagus before baking a vegetable side dish. Toast the rice before cooking it for a depth of flavor, and cook the shrimp directly in the sauce for a complete meal. Serve shrimp for dinner with this spicy twist.
"Today we're going to be making a shrimp dish. We're going to be making a spicy shrimp tomato sauce, and we're going to do that by starting with some flour and some oil, and we're going to be making a rue, a very thick blend of the two. We're going to be adding some white wine and some tomato sauce. And then we're going to be adding some chili powder, some basil, some cajaan pepper, and we're going to make that in to a thick sauce, and at the very end we're going to take our shrimp and take the shells off and put them in to the sauce and boil it with that sauce. Together with that, we're going to be making parmasean basil rice. So we're going to be making some vegetable stock, we're going to be toasting our rice, we're going to be adding the vegetable stock and some basil, we're going to be adding dried basil and fresh basil to this, and we're going to bring it to a boil, reduce it till all the liquid is gone, and then we're going to top it with our fresh basil and some parmasean. And for vegetables, we're going to be taking some asparagus, we're going to be boiling them. And then we're going to cut some mushrooms and some basil and orgeneo, and we're going to bake that in the oven, topped with some parmesean."
