The rest of the liquid has been absorbed by the rice so we are going to go ahead and turn this off. Now part of this dish we have got shrimp which we have cooled down, this sauce which we have not cooked at all. We have only blended it and then our vegetables which are also cooled so as a different option for this if you would like you can go ahead and take this rice and add the corn to it and then chill it for an hour so that you have all of your dishes the same temperature. I, however, like my rice a little bit warm with this dish so we are going to scoop out a bit of that. We are going to decorate it with our olives and then we are going to go get our vegetables and they have been marinading this entire time. We will get a nice scoop that shows all of the colors and then we are going to go and drain all of our shrimp. They should be cool right now and as you can see they are cooked all the way through. We are going to put them all the way here in the front and then we are going to take some of our salsa and just scoop that right over the top. So with our jalapeno our shrimp should be a little bit spicy and that should be cooled off by our cucumbers. So here we are veracruz shrimp with our cilantro green chile salsa, our chile lime vegetables and our corn and olive rice.
