"I'm Katie Adams, a registered dietitian with Decathlon Club part of Western Athletic Clubs. Vitamin E is an anti-oxidant that protects the body's cells from damage. The best food sources of vitamin E are going to be vegetable oils, nuts, leafy greens and fortified breakfast cereals. The oils and nuts have fat incorporated into them already so they'll be best absorbed. For the products that don't have fat in them, such as spinach and other dark leafy greens, it is important to add a small amount of fat so that the vitamin E will be best absorbed. This can be done by adding a small amount of oil to spinach as you saute it.
