"These are kind of dirty so I'll put them over in the water. Okay, so you come to me and you say, "I want to bartend. What do I do? How do I do this?" You have to show some, wherever you're going, you have to show that you're down to bust butt. You're down to work hard because it's not, I mean, when I'm sweeping and mopping up behind my bar and my guests see me, I'm like, "this is the glamorous part, yeah." You have to really want to work hard. You have to let the person know that's hiring you know, "look, I'm going to come in here and do whatever it takes to work my butt off to prove to you." You can't just have gone to bartending school. That's not enough. Bartending school's wonderful because it teaches you recipes, but old school bartenders, I've been bartending for sixteen years, old school bartenders they'll say, "bartender's school, that's nice, you know recipes but what can you do?" You have to almost like become an apprentice. It's like a, you can't just go out and become a sushi chef. And you have to be able to work really, really hard and keep your mind open and learn."
