"And today, we are making Chile Verde. Now we have our meat cooking, make sure you're watching it, stir it up. Okay. Make sure there's plenty of olive oil so something is searing it. We've got our anaheims. I didn't mention this, but I used about a- I'm using today about a cup of anaheim, this is all the anaheims we're using. And just grab a couple of them, and just cut them up into tiny pieces. It's all up to you how big of pieces you want. I like them, just small, small enough to just mix it up, just get a knife and chop it up. Now anaheims, some of them are a lot hotter than others. The only way to find out how hot a batch is, is by eating them. So I like to be safe and make sure that all the seeds are gone. All the seeds are gone. And even if you don't like hot food at all, you can just rinse it off, rinse it off, rinse off all the seeds under water. Scraping them off you can get most of them, but you can see, there's still some here. So we're cutting them up here, almost done. And they're really slimy, so they're really hard to grip. I know this batch is really hot, so I'm taking out almost all of the seeds. You'll just get to know when you buy a big batch, a big bushel of them, you'll get to know how hot they are, and then whether to put them in it."
